Ingredients:

  • 400g linguine pasta
  • 250g shrimp, peeled and deveined
  • 250g scallops
  • 250g mussels, cleaned and debearded
  • 1 cup cherry tomatoes, halved
  • 1 cup bell peppers, thinly sliced (mix of red, yellow, and green)
  • 1 cup cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste

Dressing Ingredients:

  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • Salt and pepper to taste

Instructions:

In a large pot of salted boiling water, cook penne pasta according to package directions until all is done. Drain and rinse with cold water to stop cooking. Set aside.

Heat olive oil in a big skillet over medium heat. Season with salt and pepper. Add the shrimp and scallops, and heat until they are cooked through and beginning to become golden brown. Remove them from the skillet and place them aside.

If necessary, add olive oil to the same skillet before adding the mussels. Cook until they burst open; discard those that don’t. Remove the skillet from the heat and set aside.

Mix the dressing ingredients (olive oil, lemon juice, minced garlic, Dijon mustard, honey, salt, and pepper) in a small bowl and set aside.

Cooked penne pasta, cooked shrimp, scallops, mussels, cherry tomatoes, bell peppers, cucumber, red onion, parsley, and basil should all be combined in a big mixing bowl.

After adding the dressing to the pasta salad, gently toss to mix everything and coat everything equally.

If necessary, add more salt and pepper to the seasoning after tasting.

Cover the bowl and place it in the refrigerator for at least half an hour to allow the flavors to mingle.
