Ingredients:

  • 1 pound shrimp, peeled and deveined
  • 1 pound scallops, patted dry
  • 1 pound fettuccine pasta
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 tablespoon Old Bay seasoning
  • 1 teaspoon black pepper
  • Salt to taste
  • 2 tablespoons olive oil
  • Fresh parsley, chopped (for garnish)

Instructions:

  • According to the package instructions, begin by cooking the fettuccine pasta in a large pot of salted boiling water. Once cooked to al dente, drain the pasta and set it aside, reserving about 1 cup of pasta water.
  • Heat olive oil over medium-high heat in a separate large skillet or pan. Add minced garlic and sauté for about a minute until fragrant, being careful not to burn it.
  • Add shrimp and scallops to the skillet, spreading them in a single layer. Sprinkle Old Bay seasoning, black pepper, and a pinch of salt over the seafood. Cook 2-3 minutes on each side until the shrimp are pink and the scallops are golden brown. Remove the seafood from the skillet and set aside.
  • In the same skillet, pour in the heavy cream, scraping up any browned bits from the bottom of the pan. Bring the cream to a gentle simmer.
  • Gradually whisk in the grated Parmesan cheese, stirring constantly until the cheese has melted and the sauce is smooth and creamy. Adjust seasoning with salt and pepper to taste.
  • Return the cooked shrimp and scallops to the skillet, gently tossing them in the Alfredo sauce until heated.
  • Add the cooked fettuccine pasta to the skillet, tossing it with the seafood Alfredo sauce until well coated. If the sauce is too thick, add some of the reserved pasta water a little at a time until the desired consistency is reached.
  • Serve the hot Heavenly Shrimp and Scallop Alfredo, garnished with chopped fresh parsley. Enjoy this decadent dish with crusty bread and a side salad for a complete meal experience.
